FAMILY FRIENDLY COD CURRY
A firm favourite in our house, you can add more spices if you prefer more heat and you can swap the cod for any other protein.
Ingredients:
400g cod fillets (skinless and boneless)
2 tablespoons vegetable oil
1 large onion, finely chopped
2 garlic cloves, minced
1 tablespoon ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 teaspoon garam masala
400g can of chopped tomatoes
400ml coconut milk
Salt and pepper to taste
Fresh coriander for garnish
Cooked rice or naan bread, to serve
Instructions
Pat dry the cod, season with salt, and set aside.
In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until soft and translucent (about 5-7 minutes). Add the minced garlic and grated ginger, cooking for another minute until fragrant.
Stir in the cumin, coriander, turmeric, and garam masala. Cook for 1-2 minutes, stirring frequently, until the spices are fragrant.
Pour in the chopped tomatoes and coconut milk. Stir well to combine. Bring the mixture to a gentle simmer.
finally add the cod pieces to the pan. Simmer for about 10 minutes, or until the fish is cooked through and flakes easily with a fork.
Taste and season with salt and pepper as needed.
Remove from heat and garnish with fresh coriander. Serve with cooked rice or naan bread.
