FAMILY FRIENDLY COD CURRY

A firm favourite in our house, you can add more spices if you prefer more heat and you can swap the cod for any other protein.

 Ingredients:

  • 400g cod fillets (skinless and boneless)

  • 2 tablespoons vegetable oil

  • 1 large onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tablespoon ginger, grated

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon turmeric

  • 1 teaspoon garam masala

  • 400g can of chopped tomatoes

  • 400ml coconut milk

  • Salt and pepper to taste

  • Fresh coriander for garnish

  • Cooked rice or naan bread, to serve

 

Instructions

  1. Pat dry the cod, season with salt, and set aside. 

  2. In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until soft and translucent (about 5-7 minutes). Add the minced garlic and grated ginger, cooking for another minute until fragrant.

  3. Stir in the cumin, coriander, turmeric, and garam masala. Cook for 1-2 minutes, stirring frequently, until the spices are fragrant.

  4.  Pour in the chopped tomatoes and coconut milk. Stir well to combine. Bring the mixture to a gentle simmer.

  5. finally add the cod pieces to the pan. Simmer for about 10 minutes, or until the fish is cooked through and flakes easily with a fork.

  6. Taste and season with salt and pepper as needed.

  7. Remove from heat and garnish with fresh coriander. Serve with cooked rice or naan bread.
